Wild harvested in the Snowy Monaro and surrounds, processed by Shukaku, these tender little guys will be dead sexy seared all round, cooked medium rare and served with a dollop of Rockstock Deli Café de Paris butter. Its hot so whack a salad together with some Two Gums Farm salad mix and their fresh tomatoes. Or if you are feeling a little bit Julius Caesar, add some poached Eagles Range pasture raised eggs and some crispy fried Rockstock Deli dry cured bacon (cured with Wildbrumby schnapps distillery gin botanicals) and make your own croutons with SNOWY MILL BAKERY sourdough bread. A good salad MUST have a good olive oil, and you’re not gunna believe this but we have some and its bloody good - Snowy Mountain Estate Ultra Premium Extra Virgin Olive Oil. You could take the thing a whole other direction and pair the venison with some Snowy Mountains Fermenting Co Sauerkraut or a Far Meadow Lodge Chutney? We got organic vegies too in case you don’t make friends with salad. While you are in store putting your ingredients together for this meal of a lifetime, grab a coffee, maybe a red hot toasted sanga, a deadly house made sausage roll, or a pie, cake or cookies made by Crackenback Farm Restaurant & Guesthouse.
