THE FERAL FOOD SOCIETY
A few years back now a bunch of us locals (or yokels if you like) would have drinks at the Wildbrumby schnapps distillery most Sunday arvos. Brad Spalding got to talking one day about restaurants and cafes offering “local” foods. He reckoned that in the Snowy Mountains, with our climate not ideal for agriculture, if you wanted local food on the menu it would really have to be FERAL. The FERAL FOOD SOCIETY was born. Each Sunday the challenge was to bring a dish to share created from local feral foods. We ate rabbits, weeds, pigs, goat, hare – you name it. But the feral food most featured (because it was most abundant) was venison. And we ate it every which way including raw (carpaccio and tartare). What better way is there to control feral animals than to eat them? The only catch is how to get hold of the little buggers – not everyone has the time, skill or inclination The excellent news is that we just took delivery of some wild harvested venison from Shukaku (https://www.instagram.com/shukaku_meats/). These guys harvest to order for us and supply us only with stock from their Cooma chiller so you can not only enjoy this delicious ethically harvested meat but you can contribute to deer control in our Shire. What the heck, start your own FERAL FOOD SOCIETY SUB-BRANCH. Venison + friends + booze = BAM! This week we have: - Heaps of back strap, individually packed and beautifully trimmed - Gourmet burgers – packed in pairs - Lean dice in 1kg bags - Jerky – “Matts maple magic” or “Tom’s secret recipe” (this may include venison harvested outside the Snowies) - Venison bites – marinated, diced ready to cook Later this week we will have our own fresh and hot smoked snags in store, we will post again when they land. Upper level Nuggets Crossing opposite the post office. (But just sayin, despite what Brad said, Rockstock Deli has heaps of locally produced food on our café menu and in store - it dont have to be feral!)
